R&D: Sunshine Red Velvet Mini Cupcakes

I am pretty excited about an upcoming charity gala event I have been involved in planning! On May 4th in Kingston, a Bright Night, Big Dreams Gala in support of The Sunshine Foundation of Canada will be held at the Renaissance Event Venue. 

I am working on some very special Mini Red Velvet cupcakes for our candy bar and thought I would share my progress. Between the velvety cake and the cream cheese icing, this will defiantly be a job for Arty the stand mixer. Check out the inspirational photos I have found and the links to recipes I am considering. Any recommendations out there for a first time mini-cupcake-red-velvet maker??

I love the decorative liners used here! Looks like they were double lined - I have noticed that liners fade with baking so this is a great solution.

I really like the icing piping going on here. Defiantly going to be a consideration
